Holiday Bite-Sized Treats: How to Use Christmas Leftovers into NYE Canapes
What kinds of bite-sized appetizers can I prepare for New Year’s Eve using my Christmas remaining food that will still impress guests?
Finger food needn't be fancy, so New Year's offers a perfect chance to use up what's left. The main guideline is to stick to items to just one bite—no one wants to handle a fork. Guests are looking for a big hug of hearty fare with a decadent twist.
If you have a bit of cured fish left, place it on mini pancakes and crown it with lumpfish caviar. Small patties are also just the ticket: If you have leftover smoked haddock or flaked salmon, fold it through mashed potato, blend with fresh herbs, lemon, and caramelized onions, then roll in panko and deep-fry.
You could also get creative with croquetas. Prepare the white sauce a few days ahead, then use remaining pork, poultry, or foraged fungi for the interior. Blitz stale bread into crumbs to cover them, then fry. Savoury pastry mixtures are another natural home for those crumbs, or use them as a jacket for chicken pieces. For flavour, just add a bit of citrus zest and aromatic herbs, and they'll sing so much more. As an aside, buttery pastries make excellent crumbs, too.
One favourite thing at this time of year is a leftovers sandwich, and that can continue after Boxing Day. Get some holiday meats in an airtight container and store in the freezer. While you're at it, reserve some berry relish and honey ham glaze in the fridge. When needed, thaw the meat, then place it in a hot oven with the saved glaze for a short time. Cool and slice thinly, then arrange on top of some sourdough and assemble mini sandwiches with lots of cranberry sauce. Slice into bite-sized pieces for a surefire hit.
Leftover turkey, meanwhile, could be turned into a zingy salad. There’s always a bit of dark meat left over, and it's perfect for something punchy. Pull the meat, then fry it slowly in a pan, and toss with remaining sauce loosened with citrus juice, a spoonful of soy and a little chilli oil. Garnish with chopped herbs and some sliced spring onion, and present in little gem leaves.
Revamping Remaining Veg
Veg, meanwhile, can be dressed up and ready to party with a big batch of fried potato cake. Combine all your remaining vegetables with fresh herbs, then add salt and pepper and add a binding agent. Cut out portions to about the size of blinis, then store in the icebox. Reheat in a preheated oven for a few minutes and finish with whatever you like—perhaps roast beef and grated horseradish. A word to the wise, though: save a stash for a late breakfast the next day.
